 *Makhana Kheer* (Serves 4)


Makhana or lotus seeds are a powerhouse of nutrients. They are high in protein and help in preventing inflammation.

*Ingredients* :
1/2 cup soaked cashews
1/2-3/4 cup soft dates
1/2 cup roasted makhana, crushed (lotus seeds)
1/2 tsp cardamom powder (elaichi powder)
1/4 tsp of safroon (optional)
2 cups of water

*Method* :
Place soaked cashews, dates and 1/2 cup of water into a blender and blend till smooth and creamy. Add rest of the water and blend again. You can adjust water to taste. Pour this mixture in a saucepan and let it come to boil. Add in the crushed makhana and let it boil for 3-5 mins. Add cardamom and safroon. Switch off the flame. Serve hot or cold.

*Variation* : You may use any cooked millet instead of makhana.
