*NAVRATRI SPECIAL*Sweet potatoes are a abundant source of beta-carotene and vitamin A. Vitamin A is essential in helping the body fight off infections and remain resistant to any further infections.
*Ingredients* :
1 medium - Sweet potato
Half cup - almond milk or any plant based milk
2 tbsp - cashews
1 tbsp - raisins
4 - big mejdoul dates (mashed)
1/4 tsp - cardamom powder
1 tbsp - desiccated coconut
*Method* :
Wash and cut sweet potato into 3-4 pieces. Steam it and grate it or mash it. There should be no lumps. Roast cashews and chop it into big pieces. In a pan, add mashed sweet potato, almond milk and nicely mashed dates. Stir it continuously. Cook it till it leaves sides of the pan. It should be little dry. Add cashews, raisins and cardamom powder. Mix well. Let it cool a little. Make small balls and flatten it like peda. Roll it in desiccated coconut. Keep it in the freezer for 10 minutes to harden little.
*Variations* : it can be made with potatoes. This can be used as a filling for puran poli or serve it as halwa.
