Salad : Stuffed Tomato with Corn Indian Style

Ingredients:
6 tomatoes (firm, red, medium sized)
1 cup corn
1/4 cup peanuts soaked
1 tsp green chili paste
1 tsp jeera powder
1 tbsp date paste (optional)
1 tbsp coriander leaves, chopped
Mix of grated vegetables like cabbage
1 cup carrots grated
Salt

Cut tomatoes into half, scoop out the flesh. Rub salt on the insides and set aside to drain. Crush soaked groundnuts and mix with corn and seasoning ingredients, except salt. Stuff the tomato halves with this mix. Serve on a bed of grated veggies in which some groundnut masala is mixed.

Half the Tomatoes and deseed it then apply the salt in inner side......For stuffing I used Capsicum, Cabbage, Raw Mango very finely chopped, Roasted peanuts crushed, Date paste, Jeera powder, Slight lime juice, Green Chillies or Black pepper according to your taste. Put this stuffing in tomatoes and garnish with coriander or mint leaves and top with the sprinkle of any seeds of your choice
